Highlighting "Twirl and Taste" and Some Odds & Ends

I was visiting Libby Murphy at her beautiful blog,Twirl and Taste, this week and found that she has a wonderful giveaway going on. It's a darling 7 piece French Home etched wine set. I must tell you that I have fallen in love with it! Libby posts fabulous recipes every day and fun stories about people you read about in the newspaper and magazines. I especially enjoy reading Libby because she is from the same place I am originally from, near Knoxville Tennessee.  Libby talks like my people, she cooks like my people, and she makes me feel like I'm home again when I visit her. Libby's current post includes a wonderful southern recipe for Refrigerator Rolls.  I remember my own mother making these.  So if you haven't done so yet, check Twirl and Taste out soon - I think you'll love it!

Ten Honest Things About Me:

1.  I love plain white cake so much that I could eat one all by myself in a weekend!

2.  On average, I go to bed at about 3:00 AM and sleep about 4 or 5 hours.

3.  I sleep with both a fan and an electric blanket on year round.

4.  The beach feels like church to me.

5.  I met my husband when I was 15, became engaged to him when I was 16, married him when I was 17.

6.  I despise dishonesty.

7.  I actually DO NOT pray that my son and DIL will have quads, even though I may have on occasion hinted that I do.  I'm not sure why - just a mean streak I guess.  Well, yes, I do know why.  It makes my son crazy, especially if I hint the quads might ought to be all girls!  Oh, the fun in turning the anxiety around once in a while!

8. I have watched General Hospital since I was coming home from elementary school to watch it on my lunch hour.

9.  I did not rest on my beloved deck swing ALL SUMMER LONG - why, why, why???

10.I start getting depressed in August because summer is almost over and I CANNOT enjoy Autumn because the trees will be naked and my garden will be bare soon, and the seemingly endless winter will over take us any minute.  I know...I need an attitude adjustment.

Lazy Beach Days For Two

Hubby and I are on our way to the Florida beach after a busy, busy month. We can't wait! Our daughter and son-in-law and their two little girls are staying home this summer and our son and brand new daughter-in-law are on their European honeymoon, so Hubby and I will be spending two lovely weeks at the beach alone this year. Not bad. It seems we rarely go anywhere alone and while we will miss our beautiful family, we are really looking forward to lying in the sun and walking on the beach together. I've mentioned before that we've stayed at the same place in Florida during the same weeks for over 30 years. So it's a home away from home and we've made lots of wonderful friends there that we always look forward to seeing and visiting with. I am looking forward to being totally lazy! It's been a non stop month of wedding prep and getting ready for out of town company. Even though both of those causes are lovely, it's nice to have some days to have absolutely nothing to do other than be lazy.

I haven't posted much in the last month so I've prepared some posts to publish while I'm away in hopes you won't forget about me! One of the posts will include pictures from our sons June 20 wedding. Enjoy the July 4th celebrations and lots of fun, safe summer days!

Liz, Craft From My Heart, recently gave me this "One Lovely Blog" award. Thanks Liz! I'm so sorry that it's taken me so long to post your award. I do so appreciate it though! I believe the instructions were to pass the award along to 14 bloggers that you have recently discovered. I'm going to have to think about that one! I have been so busy with the plans for our sons wedding that I have spent very little time on the computer in a month. I haven't even been to visit my good old favorite blogs, let alone have time to find new ones! What Memory Problem???

All bloggers are happy for their friends when they receive well deserved awards, but let's face it - awards are not the most exciting thing for fellow bloggers to read about. Well, how about an award most of us can give ourselves and for a cause most of us share?


Sometime during the early winter Kat, Just A Beach Kat, posted this cute Dory Bad Memory Award and she offered it up to anyone whose memory fit the description. I copied it to a file and then forgot about it! Recently I have been busier than usual getting ready for a bridal shower, my sons wedding, and a couple of trips. It seems like I have ten too many important things floating around in my head to remember. The lack of carbohydrates while getting ready to wear that pink chiffon dress at my sons wedding hasn't helped either! Well...today is the perfect day to resurface that Dory award.

I have spent the last two weeks shopping for wedding and shower supplies and for accessories for my outfit for the wedding, in addition to keeping track of the shower RSVP's. I'm not complaining about doing any of it - I am grateful that my sweet little daughter-in-law to be trusts me enough to ask me to decorate for her wedding. I mean, what an honor that is! And I love it all. But today...well, today was one of those days which lead one to get some extra rest - and maybe a cookie!
The day started so well. I had a few errands to run this morning. I left the house feeling quite chipper, fitted perfectly in a pair of jeans I hadn't been able to wear in a year. My hair looked especially cute, if I say so myself, and my nails were coming along nicely. I had decided I would heed my doctors advice and forgo acrylic nails - besides they cause ridges and really thin natural nails. My nails were looking pretty good - no bumps or ridges and growing quite long. I went to Kohl's to look for a few things to take on an upcoming trip since they have a great sale going on. I immediately found some things I liked, but managed to leave most of them on the floor WITH MY PURSE while I wondered around the store looking at a few other things. "OH, NO!" came to mind when I needed my purse. Backtracking, I found all my loot and my purse unharmed. I eventually bought several items without trying them on and continued on my way to Lord & Taylor at a mall across town. I was in search for a gift, which I didn't find, but managed to leave my reading glasses on a counter. When I say I need reading glasses, I mean I NEED READING GLASSES! Thankfully, I hadn't gotten too far, but I still had to waste more time going back for the glasses that should be welded to my head whenever it would be convenient to see. I left the mall where Lord & Taylor is and went on to my next stop - the cleaners. I needed my Springy lime green jacket to wear to the shower on Sunday in case nothing in my shopping bag worked. There seemed to be some kind of discrepancy with another customer, but I waited patiently, just happy the problem was not with my jacket. Not so fast. While the gentleman argued his point that his wife's Delta Airline uniform blouses should be white with red trim, not white with red streaks up the sleeves, another employee searched for my lime green jacket. Oh boy, this was not looking good. She ran the automated clothes rack around in circles with such speed that my lime green jacket became a blur. More amazing to watch was the young lady, as she ran around the same circle under the rack with equal speed. Gee...it's difficult to get those clothes off that rack without stopping it first. Thankfully, a light bulb moment struck this bright young woman and she stopped the rack from its twirl in order to fetch my jacket. Clean lime jacket in hand, I was off to Hobby Lobby to rent two lovely white candelabras for the June wedding. My son met me there to choose the set he and his sweetheart wanted to use. He left for a job site and I searched out an employee to write it up. Now...our Hobby Lobby is brand new. One hour and 6 ladies later I was on my way out the door with rental agreement in my now NAIL BITTEN HANDS. Not one single person in the store, including the manager, knew how to rent out the stinking - I mean, lovely wedding items. Two more stops, I thought to myself gratefully as I got back into the line of traffic extending for two miles - and I might add, trying to avoid pot holes large enough to eat an automobile for lunch. I needed to run into the hardware store to pick up some - wait...I'm in the hardware and I can't remember why I came here. I left without whatever it was I needed. Thank the good Lord - literally, last stop! But the theme of the day wasn't quite over yet. I remembered what I had forgotten - I hadn't needed a thing at the hardware store, but I did need an album from Kohl's as part of the shower supplies. I returned to Kohl's and quickly chose two albums since they were on sale. I didn't know what I needed the second one for but on a day like today, I wasn't taking any chances. Back in my car, now 8:00 pm, I headed for what was going to be my last stop. I started tanning this week so I won't burn to a crisp in Florida. I wanted to stop to do that so I wouldn't have to go out again tonight. I thought about the day as I waited for my 13 minutes of mindless pretend sunshine. I would try to relax while I tanned, I would go home and have a nice bubbly whirl tub bath, and I would treat myself to a low carb "treat" bar - yum and joy. This nightmare day was almost over. My name was finally called - "room 7 is ready for you, Kathy". As I happily placed my purse on the chair in the room I glanced in the mirror. BACKWARDS! My hooded, navy blue with white stitching running suit jacket had been on BACKWARDS ALL DAY.

Today, I am awarding myself the Dory Award and an extra low carb protein bar. If any of you girls can top my day, go ahead - you deserve to claim Dory for your own! As for tomorrow, maybe I should rethink those acrylic nails.

Vintage Jewelry For Show & Tell


I thought I would show you some of my vintage jewelry collection today for Show & Tell. Some of it was my mothers, some of it was my mother-in-law's, and some I collected over the years from antique shops and flea markets. I have quite a bit more that I'll get out and show over the coming months.

Christmas Spirit

Ro, A Hint of Home, recently gave me this great award. Thanks so much, Ro! Ro always has interesting posts and wonderful pictures of her beautiful home and town. She is a fabulous decorator.

More Holiday Party Recipes


Mini Party Quiches
Crust:
1 stick butter
3 ounces cream cheese
1 cup flour
Mix all together well and press into bottom and sides of mini muffin tins.

Custard Filling:
4 eggs
1 tablespoon flour
1 ½ cup cups half & half
¼ teaspoon salt
pepper to taste
1/8 teaspoon nutmeg
2 teaspoons melted butter
2 tablespoons diced onions
½ pound bacon, fried crisp & broken (if desired)
1-2 cups Swiss cheese
Preheat oven to 375 degrees. Break eggs in bowl with wire whisk. Stir in next 6 ingredients. Layer each prepared, unbaked, pastry shell with bacon first, then cheese, then onion. Spoon custard filling over these ingredients in each shell until 2/3 full. Bake at 375 degree oven until slightly puffed and custard is set, about 35 minutes.
Note: This recipe can also be made in a pie plate or quiche pan. When having a party, the basic custard recipe can be used to make a variety of mini quiche appetizers using your choice of vegetables and meats; vegetarians could even try Crumbles.

Chocolate Coffee
1 quart half and half
1 quart milk
1 entire small bottle Hershey’s Syrup
10 cups strong, hot coffee

Heat the half and half, milk, and chocolate syrup in a saucepan over low heat until it comes to a simmer. Pour into heat proof punch bowl or other large heat proof serving vessel. Add coffee. Mix all thoroughly. Serve garnishes on the side, such as whipped cream and chocolate shavings.
Makes 16 - 20 servings.



Green Holiday Punch
2 packages lime Kool-Aid
1 ½ cups sugar
2 quarts water
1, 12 ounce frozen orange juice concentrate
2 juice cans water
1 large can pineapple juice
1, 2 liter bottle Verner's or 7 Up
lime sherbet

Mix all of the ingredients together well in a punch bowl, reserving sherbet and soda. When ready to serve, scoop sherbet in punch and add cold soda.
Makes 5 ½ quarts (22 cups).



Frozen Banana Crush Punch
Dissolve 4 cups sugar in 6 cups boiling water.
Add:
46 ounces pineapple juice
2, 12 ounce cans frozen orange juice concentrate
1, 12 ounce frozen lemonade concentrate

Blend 5 ripe, mashed bananas and juice of 2 fresh lemons in blender until smooth. Add to above concoction. Freeze in small amounts. Allow the frozen punch to thaw approximately 4 hours before serving time. Place still slushy punch in punch bowl when you are ready to serve the punch and add equal amounts of lemon lime soda.

Holiday Recipes

Everyone likes a few new recipes to try during the holiday weeks or for their Christmas guests. I am posting three today that are tried and true wonderful! I hope you enjoy them.

This chocolate cake is absolutely to die for! It's an old Pillsbury Bake Off recipe, probably from the '60's. My mom made it every Christmas when I was a kid at home. It has several steps and looks involved, but it's worth it if you love chocolate AND coconut!

Chocolate Macaroon Cake
3eggs, separated
1 teaspoons vanilla
2 ¼ cups sugar, divided ½ cup, ½ cup, and 1 ¼ cups
2 cups coconut
2 cups flour and 1 tablespoon flour
¾ cup hot coffee
½ cup cocoa powder
1 teaspoon soda
½ cup sour cream
½ cup Crisco
1 teaspoon salt
Preheat oven to 350 degrees.

Prepare coconut mixture:
Beat 1 egg white with 1 teaspoon vanilla until soft peaks form. Add ½ cup sugar, beating until stiff peaks form. Stir in coconut and 1 tablespoon flour; set aside. Dissolve coffee in cocoa; set aside. Beat 3 egg whites until soft mounds form, add ½ cup sugar; continue to beat until stiff peaks form. Add soda to sour cream; set aside.

Cake Batter:
Beat 1 ¼ cups sugar with Crisco, all egg yolks, salt, 1 teaspoon vanilla, and ½ the coca/coffee mixture. Beat until light and creamy. Add 2 cups flour, sour cream, and remaining cocoa mixture; blend well. Fold in beaten 3 egg whites. Turn half of the cake batter into a greased, floured tube pan. Top with ½ coconut mixture. Turn in remaining half cake batter and then top with remaining ½ coconut mixture. Bake cake at 350 degrees for 55-65 minutes. Cool before removing from pan. Frost or glaze if desired.



This pie was my grandmother's recipe. She made it for her family when my mother was a child. It's easy and wonderful.

Grandmother’s Coconut Buttermilk Custard Pie
3 large eggs
1 cup sugar
¾ stick melted butter
½ cup buttermilk (be generous with your ½ cup)
1 teaspoon vanilla
1 1/3 cups Angel Flake Coconut
9 inch unbaked pie shell

Preheat oven to 325 degrees. Mix eggs with a whisk, add all remaining ingredients except coconut and mix again. Stir in coconut. Pour into prepared, unbaked pie crust. Bake at 325 for 45 - 50 minutes. Cool before serving. This pie is best served the day it is baked.



I have made this cheesecake for so long I no longer remember where I got the recipe, but if I say so myself, it's the best I've ever had! I hope you agree.

Kathy's Famous Cheesecake
Crust:
1 ¼ cups graham cracker crumbs
¼ cup sugar
¼ cup melted butter
Stir together and press into bottom of 9 inch spring form pan. Don't bake the crust at this point.

Preheat oven to 350 degrees.

Cheesecake Filling:
3, 8 ounce packages cream cheese
¾ cup sugar
3 eggs
1 teaspoon vanilla
1 cup sour cream
½ cup sugar
½ teaspoon vanilla

Beat the cream cheese, ¾ cup sugar, eggs, and 1 teaspoon vanilla together until smooth with mixer. Pour into 9 inch spring form pan and bake at 350 degrees for about 30 - 40 minutes, or until knife inserted in middle comes out fairly clean. Ten minutes before time is up for baking, stir together 1 cup sour cream, ½ cup sugar, and ½ teaspoon vanilla. Spread over top of cheesecake. Bake at 400 degrees for 10 minutes. Chill; top with strawberries and prepared strawberry pie glaze.
