Below are a couple of easy recipes to make for your families this weekend. The Cheesecake Cupcakes are to die for! They are so easy and fast to make and they look beautiful on a dessert tray. Everyone loves them. They're the perfect treat for Valentine's Day!

Cheesecake Cupcakes
2, 8 ounce packages cream cheese
1 cup sugar
4 eggs
1 teaspoon vanilla
1 box vanilla wafers

Preheat oven to 350 degrees. Mix first 4 ingredients together with mixer. Place 1 wafer in bottom of cupcake liners in muffin tins. Fill 2/3 full with cheesecake batter. Bake at 350 degrees for 20 minutes. Cool and spoon on any fruit topping.

This cobbler is quick and easy - a great family dessert, especially with ascoop of vanilla ice cream! While I like using fresh fruit for cobblers, canned peaches are better than none this time of year.

Easy Cobbler
1 cup sugar
1 cup flour
1 cup milk
1 teaspoon vanilla
1 stick butter
1 large can (29 ounces) sliced peaches
2 tablespoons sugar for topping
1 teaspoon cinnamon for topping

Preheat oven to 350 degrees. Melt butter in 8x11 inch glass baking dish.
Pour peaches, juice and all, in butter. Mix the other ingredients together and pour the batter evening over the peaches. Sprinkle a little sugar and cinnamon on and bake at 350 degrees for 35-45 minutes or until brown and bubbly. De-lish when served with whipped cream or ice cream!

Hi Kathy, The recipes look delicious and easy - what could be better. I printed both of them. I have been looking for a dessert to serve at committee meetings. I usually have a meat and cheese platter, chips, etc. The individual cheesecakes will be perfect.
